A Recipe for You

I am stuck in an audit all day today. Please pray for my sanity. It’s a little past noon and I’ve been at it for four hours and who knows how much longer I will be in this room. I happened to have a moment right now while the auditor chats it up with another person in the room and so I thought I would do a quick post so as not to disappoint those of you who stop by today.

I mentioned in my More Birthdaying post that Erika had made a Dorito Casserole and Mary left a comment wondering about the recipe. I asked Erika if she would share the recipe so I could post it for you all in case anyone wanted to give it a try. I had some leftovers today for lunch and it was just as wonderful. Give it a try sometime soon.

Chicken Dorito Casserole

Ingredients:
3 cups cooked, chopped chicken
1 can Rotel
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 bag Doritos (crushed up)
Shredded Cheese of Choice
Preheat oven to 400’.

While oven preheats, combine chicken, Rotel and soups. Add a little water if needed.
In a 9 x 13 pan, place a single layer of Doritos “crumbs”. Top with half of chicken mixture.
Add another layer of Doritos. Top with remaining chicken mixture.
Top with a good layer of cheese (Cheddar, Colby, whatever you like).
Bake for 45 minutes to 1 hour.

NOTES:
I use the canned chicken you can buy at Sam’s. 2 cans would probably be plenty; add 3 if you like more meat. It’s cheaper to stew a chicken and use that, but it takes a little more time and effort. This is certainly not a healthy dish, but I really like it. Usually I serve it with corn and salad.
